Implementing the latest energy saving facilities and technologies to achieve effective energy use

To reduce emissions of the greenhouse gas CO2, Yamazaki Baking makes efficient use of energy both in the production phase of its products, and the logistics phase when delivering those products to stores. The company implements a cogeneration system that delivers heat and electric energy efficiently in facilities where fresh products are made every day. It also uses air conditioning facilities with heat pumps that achieve higher energy efficiency than conventional gas or steam equipment, as well as cleaner energy sources such as solar power generation systems. Every day, Yamazaki Baking’s delivery vehicles take fresh products to its customers, so distribution is also a major part of the company’s environmental efforts. In addition to promoting environmentally conscious driving, it uses a cutting-edge delivery management system to optimize delivery routes, thereby reducing the number of vehicles and delivery distances. The company also implements fuel-efficient and low-emission vehicles such as hybrid and natural gas vehicles, and is currently testing electric vehicles as well.

Effective use of food resources and reduction of plastic

As part of its efforts to create a sustainable society, Yamazaki Baking makes effective use of limited resources by making use of food byproducts and cutting down on packaging. One of the priorities in the company’s daily production activities is to prevent food loss by using valuable food resources without waste. To this end, Yamazaki Baking considers food byproducts that arise in the process of producing its products as a valuable resource. For example, bread crusts that are cut off in the production stage of certain products can be effectively reprocessed to create confectionaries and bread crumbs, or reused as animal feed, through the appropriate quality management processes. The company is also simplifying and downsizing its packaging as much as possible while still guaranteeing food safety and uncompromised taste, in order to limit its use of plastic and reduce household waste. The plastic banju containers used to transport bread are also recycled to make new containers.
